Bruccio: a cheese as old as the island itself
 Corsican Bruccio is a dairy product made from the whey of goat’s and/or ewe’s milk. It is said that Solomon himself revealed the secret of the recipe to Corsican shepherds several thousand years ago.
Bruccio is an ingredient in many of the island’s dishes (soups, pasta, stuffed vegetables) and pastries (fritters and cakes), but can also be eaten as it is, fresh or matured.
Made exclusively by producers in the AOC (Appellation d’Origine Contrôlée) area, i.e. Haute Corse and Corse du Sud, Bruccio is a seasonal cheese produced solely in the goat and ewe milking period in springtime.
